The iconic Chemex Coffeemaker was invented in 1941, but has made a comeback in recent years as the best cafes realize the superiority of this simple brewing method. Made simply from non-porous, borosilicate glass and fastened with a wood collar and tie, the design has remained unchanged for 70 years. This elegant, one-piece, hourglass shaped vessel, has proven to be the optimal design for a crisp, clean brew. We find it highlights our best coffees' sweetness and nuance as well as any method, without any sediment in the cup. It is also a fantastic device for brewing iced coffee!

The visual elegance of the Chemex has earned it a place in the permanent collection of New York's Corning Museum of Glass. It was also selected by the Illinois Institute of Technology as one of the 100 best designed products of modern times. Chemex Brew Guide

Makes two ~10oz servings 

What you’ll need: Chemex, filter, kettle 

40g coffee (medium-coarse) 

640ml water (200°) 

  • Place filter into Chemex and rinse well with hot water, then empty 

  • Pour grounds into filter, shake to even the bed of grounds 

  • Pour 80g water over 10 seconds, let bloom until :30 

  • Each following pour should take ~15 seconds 

  • At :30 pour to 250g, starting in the center, spiraling outwards then back to the center 

  • At 1:00 pour to 350g 

  • At 1:30 pour to 450g 

  • At 2:00 pour to 550g 

  • At 2:30 pour to 640g 

  • Give a gentle tap to even out the bed of coffee and let drain 

  • Total brew time 5:00-5:30
